Greens with Grits

What could be better than a hot bowl of butter drenched grits with a grating of Parmigianno-Riggiano? Hot grits with freshly harvested bok choy, koji tatsoi, and even a large leaf of red radicchio. Adding an organic tart cherry, fig, raspberry, and blueberry smoothie with cauliflower only makes it better. This is my first week of trying “Daily Harvest” as a source of organic fruits and vegetable treats with a good bit of really good dark chocolate. Even with a three-day delay because of the weather and having to refreeze the order, it is still delish. As long as I am avoiding shopping and my local Walmart (the source of all pickup groceries) does not carry decent produce, I will continue this service.

Breakfast Grits with Greens

1 cup instant water

1/4 cup instant greens

pinch kosher salt

mixed greens (spinach, koji tatsoi, bok choy, raddicchio, kale)

2 Tablespoons shredded or coarsely grated Parmigianno-Riggiano (dry Italian cheese) (optional-vegans can avoid)

1 Tablespoon unsalted butter or coconut oil for vegans

Freshly ground black pepper

Koji Tatsoi

Bring water to boil and add chopped large stems of greens and gradually add grits. Boil for 4 minutes and add chopped greens. Cook another minute or until greens are wilted. You may need to add water if too thick or if it sticks to the bottom like by Instant-pot does. Serve with butter or oil and cheese, if used, and a grating of black pepper. I intended to add a dollop of sour cream, but forgot. I am sure it would only make it better, if that is possible. Try another healthier grain, if you like. I’ll try millet or basmati rice next time.

ok, my morning smoothie didn’t look like the ad, but with a little added water this is all it contained. You cannot find fresh figs this time of the year. You don’t notice the cauliflower, but I suspect if gives the drink structure and it certainly adds nutrients. They have coconut based ice cream substitutes that are delightful, too.
