This salad is not limited to Breakfast, but I like it then. You can make it many ways. Baby Arugula is now available at the Sanger WallMart, so I like that for the greens, but you could go with iceberg or Romaine or whatever. I like Blueberries as shown here, but strawberries and crisp pears are also very good. Fresh figs would be wonderful, but we can get them for such a short time each year. And the nuts can vary, too. I forgot to add them until after I took the photo, but the crunch of toasted hazelnuts or walnuts or any nut gives it a nice texture. This is more of a formula recipe with many variations, but a fruity Balsamic makes it wonderful!
Greens (baby arugula and spinach, romaine, butter crunch, etc.)
Fruit (blueberries, strawberries, peaches, pears, mango, figs, etc.)
Nuts (hazelnuts, pistachios, walnuts, almonds), chopped or crushed
Cheese (Marinated Feta, coarsely grated or shaved Parmigiano-Reggiano or Mozzarella, etc.) OMIT for vegan
Seka Hills Fruity Balsamic Vinegar (Elderberry, Fig, or Pomegranate)
Seka Hills Extra Virgin Olive Oil
Kosher or flaky salt and freshly ground black pepper
Sprinkle vinegar over greens-fruit-nuts, then drizzle with the olive oil; add cheeses and nuts along with the salt and pepper and lightly toss. Enjoy!
NOTE: you could add minced garlic and a little Dijon mustard, but I like it plain. For a non-vegetarian option chopped bacon, chicken, salmon, or other meat would be good, too.
