Sonya’s Baked and Stuffed Apples

We have a lot of apples at the temple and this is one of Sonya’s favorite ways of serving them. They are very nice for breakfast on a cold winter morning. The last time she fixed them, I think she added coco or chocolate, which was very good, too.

with Chocolate
  • 6 Small Apples or halves of larger apples in season
  • 1 Cup Dates, seeded & chopped (or chocolate)
  • 2 tsp Ground cinnamon plus more for serving
  • 1 tsp Nutmeg (Ground)
  • 1/2 tsp Ginger root, minced
  • 1/4 Cup Blanched Almond flour
  • chopped pecans or walnuts
  • 1 Cup Orange or other unsweetened fruit juice in season
  • Plain Greek (non-VEGAN) or coconut yogurt

Combine chopped dates, almond flour, nuts, cinnamon, nutmeg, and ginger: May be chopped in food processer. Add fruit juice, if needed. Core and peel top of apples, if small. For larger apples, cut in half and remove core. Stuff core area with date mixture. Pour 1/2 fruit juice over apples. Place in baking pan and air fry at 350F for 30-40 minutes or bake in oven at 375F for 40-45 minutes. Halfway, pour remaining juice over apples. Serve with yogurt and sprinkle with cinnamon.
